Demeyere is Belgian corporation that was founded in the year 1908 that specializes in the development, production, and sales of highest quality stainless steel cookware. Since the year 2009, the business is part of the Zwilling J.A. Henckels group. And yes, I’ll tell you up front that Demeyere is more expensive than consumer cookware makes, but you will find that its higher performance, advanced materials and designs, and commercial-quality construction will provide you with a lifetime of culinary bliss.
There are several lines of Demeyere cookware. All were developed for restaurant use with a large variety of specialized pieces that a chef demands. It is key to note that each piece also is induction ready - induction cooktops have long be used in commercial kitchens, chiefly in Europe, but is now gaining rapid acceptance in home kitchens.
Demeyere Atlantis
Atlantis is the best of the very best. It is designed for demanding experts, who require the highest in performance from their cookware. Each cooking method has its own exclusive traits, and this is incorporated into the design of each piece of Demeyere Atlantis cookware. Straight-sided pots and pans require the conduction of heat from the bottom of the cooking vessel into the food, using the sides and lids to retain temperature inside. Demeyere Atlantis cookware features the seven-ply InductoSeal® base that combines layers of stainless steel, silver, and a 2mm solid copper core in a hermetically sealed base that is laser welded to the sides of the pan body. The unique base design offers 33% bigger cooking surface than a traditional base with unsurpassed heat conductivity properties. The thick, surgical 18/10 stainless steel construction of the bodies and lids insulate the cookware for cooking efficiency and energy savings. Other pans require the transmission of temperature from base through to rim, such as fry pans and conical sauteuse pans. Again Demeyere uses seven layers from rim to rim using its 7-PlyMaterial® design. Combined with the ideal thickness for each style of pan, the unique design offers the chef optimum management over each cooking process. Each design also features the Demeyere Triplinduc® feature that utilizes three layers of stainless steel alloys for induction cooktops. The matte polished stainless steel surface of the Demeyere Atlantis Cookware is treated with the patented Silvinox® process that improves the resistance of stainless steel to prevent staining, tarnishing and dulling due to handling, and contact with aggressive detergents and certain foods. Silvinox-treated stainless steel also is especially easy to clean.
